The Spaniel restaurant invites to experience British atmosphere
The Spaniel restaurant, located on Bluewaters Island, has opened its doors to Dubai residents and guests. The establishment combines the cosy warmth of a brasserie with the sophistication of a haute cuisine restaurant. It is located on two floors, each with its own unique atmosphere.
The intimate downstairs dining area is ideal for savouring the Brasserie’s culinary offerings in an elegant and relaxed setting. Upstairs, guests can move to the lively bar area where British gins, draught beers and signature cocktails take centre stage.
Under the direction of renowned chef Will Stanier, The Spaniel’s menu will delight every foodie and offer the opportunity for an unforgettable gastronomic tour. Guests will be able to indulge in traditional British dishes such as the Wellington steak for two, or true classics such as the Spaniel Scotch egg with walnut ketchup or lamb shank stewed for 10 hours over a low heat.
In addition to these British classics, The Spaniel offers dishes such as whole lobster with fries and Cod Tikka Masala with flavoured rice, mango chutney and raita, as well as premium caviar. The dessert menu is equally appealing, featuring Cambridge Burnt Cream and After Eight Chocolate Tart with mint ice cream and cocoa nibs – the perfect end to a wonderful meal.
Will Stanyer is a talented chef from Brighton, whose 16-year career has been illuminated by colourful work in the restaurants of Gordon Ramsay and Jason Atterton. His skills have been recognised with awards from Michelin, AA and Waitrose. Since 2018, he has brilliantly proved himself at Marina Social in Dubai, earning him the title of Time Out’s ‘Best European Restaurant’ in 2022. Now heading up the kitchen at The Spaniel, Will creates culinary masterpieces, skilfully combining classic British dishes with contemporary trends, giving guests unforgettable moments of enjoyment.

The Spaniel is owned by Mirzo Hafizov, a prominent figure in the hospitality industry with over 20 years of experience. He has worked with renowned companies such as Jumeirah Group, Intercontinental Hotel Group, Bulldozer Group and Bolt Group. Mr Hazifov’s deep understanding of the hospitality industry led him to found Orzu Hospitality Group Holding. Through Orzu, he has introduced innovative restaurant concepts such as Zor Restaurant, AKA Restaurant and Zroom Restaurant & Lounge, each exemplifying his ability to seamlessly blend creative ideas with the gastronomic experience.
In 2023, Mr Khazifov founded the HMH Hospitality Group holding company, further expanding his influence in the industry. He continues to set new standards in gastronomy, ensuring that The Spaniel will be a meaningful addition to Dubai’s dynamic restaurant scene.
